Yogurt and cranberry pie

I took the pie sheets out of the freezer about an hour before I started working on the pie. I greased a tray with butter, put in it about half of the sheets, greasing the 3rd sheet with butter.

In a bowl I beat 9 egg whites, I added 8 yolks one by one over them (I kept the 9th yolk to grease the sheets on top), I added the lime peel, the brown sugar, I mixed well then I added the yogurt. I mixed well.

The cranberries were soaked for about an hour in semi-sweet red wine, then I drained them well and incorporated them into the pie mixture.

Over the first layer of sheets I put the yogurt composition, then the rest of the sheets, also greasing with butter the 3rd sheet until I finished with all the sheets. On top I greased the sheet with yolk, I sprinkled brown sugar and I gave the tray to baked until the sheets are nicely browned and the yogurt filling has hardened.

I put a damp towel on top of the tray and left it until the pie cooled completely. Delicious pie, I would never have thought to make, but now that I tried I can't wait to make it but in other combinations and with a few more. tastes.

It took : flour approx. 700 g, 200 ml of warm water for kneading, a pinch of salt, 20 g of fresh yeast
Filling and decoration: 500 g telemea, not very salty, 400 g fatty yogurt, 6 eggs, vanilla powdered sugar, about 100 ml oil

From the flour and warm water in which we dissolved the salt and the yeast, we knead a suitable dough hard and elastic, which we cover with a towel and let it rise a little in a warm place (about 20 min).
Meanwhile, prepare the grated cheese filling and mix with 3 and a half eggs in yogurt. You can also add sugar (according to preference).
From the rested dough, thin sheets of apple-sized pieces of dough are spread, which are spread with a rolling pin on the floured table. Sprinkle these sheets with oil (poured a little, in a thin thread), then spread a thin layer of cheese filling over the entire surface and wrinkle, from the edges inwards, with your fingertips, then carefully place in tray greased with oil, side by side, until the tray is full.
Pour the remaining 3 eggs, beaten and mixed with the remaining yogurt, on top of the filled sheets from the tray, then bake the tray, at the right heat, until it browns evenly on top, about 30 minutes. Powder the pie with vanilla sugar and cut into small, square pieces after it has cooled a little. It is very good to eat hot, but also cold, with a glass of whipped milk.

Cranberry pie, without crust

1. Preheat the oven to 175C. grease a pie tray with a little butter.

2. Combine flour, sugar and salt. Add the cranberries and walnuts and mix. Add butter, beaten eggs and almond extract. If frozen cranberries are used, the mixture will be very thick. Spread the dough in the prepared tray.

3. Bake the pie at 175C for 40 minutes, or until a toothpick inserted in the center comes out clean. Serve hot, with whipped cream or ice cream.

Yogurt and raisin pie

  • 5 eggs
  • 400 g yogurt
  • 600 g sweet cottage cheese
  • 200 g sugar
  • peel of a lemon
  • vanilla
  • 100 g raisins (hydrated in water with enough rum to cover them)
  • 2-3 lg milk
  • 1 lg sugar
  • vanilla
  • 2 lbs of the composition of the 5 beaten eggs.

Beat eggs (do not forget to stop 2 lg of their composition), sprinkle with sugar and mix until melted, add yogurt and mix, add cheese.

After mixing, add the raisins (previously hydrated in rum water), lemon peel and vanilla.

Grease the tray with oil and place the sheets (I put about 6 sheets) carefully greasing each sheet, place the filling and put another half of sheets on top just as greased with oil.

The pie is cut before being greased with the ingredients for greasing and put in the oven.

(Do not cut as for serving, just prick the stripes on which it will be cut after baking with a sharp knife)

Bake for 20 minutes. over medium heat and another 10-15 over medium-high heat but the tray should be placed on top to brown.

After removing from the oven, cover with a damp towel, until it cools down a bit and will cut nicely.

Method of preparation

We prepare the filling for the Apple Pie and tender dough with yogurt and lard.

Depending on the resulting syrup, add or not semolina. I only had to add a tablespoon, but if more syrup is formed, the amount of semolina will increase, otherwise this syrup will moisten the dough sheet, from the bottom and will harden during baking.
There is also the option to add apples, not subject to heat treatment, but I always prefer this option, which I present here.

We prepare the dough for the Apple Pie and the tender dough with yogurt and lard.

While the apples cool, we take care of the dough.
Put in a bowl, the yolks, sugar, oil, essence and a little salt and mix them vigorously until smooth, then add the lard and yogurt in which we diluted the baking powder.
Homogenize the composition again and begin to gradually incorporate the flour.
We stop adding flour when we get a non-sticky and slightly soft dough.
Knead it a little on the floured table and let it rest for 20 minutes, covered, so as not to catch the crust on the outside.

Assembly and baking Apple pie and tender dough with yogurt and lard.

Divide the dough into two parts that we spread with the help of a rolling pin, the size of the tray.
My tray was 23/36 cm in size.
Place the first sheet of dough in the tray lined with baking paper, spread the apples over it and cover them with the second sheet.

Put the tray in the oven for 35 minutes at 180 degrees, or until the top sheet browns well.

Let the pie cool slightly then portion it and powder it with sugar.

It is very good, the apple pie, and cinnamon significantly accentuates its taste!

Sweet Cheese and Cranberry Pie

Ingredients: pie sheets, sour cream, yogurt, cottage cheese, sugar, vanilla essence, cranberries, sugar, eggs

Minimum quantity - 10 servings - 1 tray

We prepare the filling in the following way: we mix the yogurt with the eggs, we add the sugar and the essences, homogenizing everything.

Grease a yena tray with margarine, place the pie sheets (about 5 sheets I used, greased with very little butter), add the filling and raisins, spreading another 3-4 sheets of pie on top of them. Before putting the tray in the oven, homogenize the 100 gr of yogurt with the egg and with the help of a spatula we spread the composition on the entire surface of the pie sheets. Bake over medium heat until nicely browned.

After baking, let the pie cool gradually, in the oven (with the door open, to avoid excessive baking). Eventually, a clean kitchen towel can be placed over it. Serve cold, powdered with vanilla sugar. Good appetite!
