RECIPE PREPARATION Fasting vegetable meatballs with baked wedges:
Put the zucchini, potatoes, carrot and garlic on a small grater. Put them in a sieve and let them drain. Press them a little to remove excess fluid.
Chop the onion and bell pepper into small cubes and mix all the vegetables in a bowl
Add the chopped greens, season to taste with salt, pepper and paprika and add the breadcrumbs. Homogenize the composition well.
Moisten your hands a little and form the vegetable meatballs, then roll them in sesame seeds and place them in a tray on baking paper.
Cut the potatoes into thicker slices, sprinkle with olive oil and spice mixture. Mix well and place in the pan next to the meatballs.
Place the tray in the preheated oven at 180 degrees for 40 minutes.
Turn the meatballs and potatoes in half.

400 g Beans (canned)
1 small onion
1 slice of bread (or 1 bun)
1 carrot, 1 parsley
2 cloves garlic
1 tablespoon large flour

Bean Meat Preparation:
Drain the beans and then crush them with a fork or mashed potatoes. Carrot, parsley, onion are cleaned, washed and put on a large grater. Fry in a little oil until soft. Soak the bread in cold water.
Put the hardened vegetables in the crushed beans and the well-squeezed bread. Add the crushed garlic, finely chopped green parsley, season with salt, pepper to taste, add the thyme and finally the flour to bind the composition.

MUSHROOMS WITH POTATOES (POST)
My dear ones, if we are fasting it does not mean that we cannot enjoy some delicious and aromatic meatballs :) For example, we have prepared some absolutely delicious fasting meatballs, made of mushrooms and potatoes. In addition, the meatballs are baked to make them healthier.
The preparation of these mushroom meatballs takes a little longer than in the case of meatballs because all the ingredients are cooked beforehand. But the effort is well worth it!
Mushrooms have a high water content and we must temper them before adding them to the composition for mushroom meatballs with potatoes. To tie the composition I used boiled potatoes in their skins.
Garlic obviously can't be missing from the mushroom meatballs with potatoes. I put it over the mushrooms while I cook them, but towards the end, in order to keep their aroma.
Greenery is also indispensable because it gives the meatballs an extra flavor and freshness. I used 1/2 bunch of dill and 1/2 bunch of parsley. But you can use only dill or only parsley, according to your preference.
Mushroom meatballs with potatoes are excellent and warm, but also cold. You can also serve them as a main course, with a favorite salad or garnish, but also as an appetizer.
We really liked these fasting meatballs with mushrooms and potatoes! Even to my boys, who are fierce carnivores :)

This recipe can be prepared with pumpkin or eggplant or from a combination of pumpkin and eggplant, depending on your preferences.
3 medium zucchini / 2 suitable eggplants
half a cup of rice, preferably brown
1 larger onion
2-3 tablespoons of breadcrumbs
1 bunch of parsley
3-4 cloves of garlic

Step by step instructions
Start by washing the potatoes to get rid of dirt (no need to clean them). Then cut each potato according to the method described above.
For fragrant and extra crunchy wedges - Soak the potatoes in salted ice water for 20 minutes before you start. The salt adds flavor and soaking removes some of the starch that can make the potatoes stick to the tray.
Make sure you dry your potatoes well after removing them from the ice water, otherwise the oil will not cover them well.
Add wedges to a large bowl, sprinkle with paprika, garlic, onion, salt and pepper.
Sprinkle with about two tablespoons of olive oil (or spray with low-fat cooking spray), then mix everything together.
Wallpaper the baking tray with non-stick aluminum foil. Allow the potatoes to brown without sticking to the pan and not to burn.
Place the potatoes on a baking tray and spray with extra cooking spray if necessary.
Bake for 35 to 40 minutes. For an extra crunchy finish, turn the potatoes halfway through baking.
For best results, be sure not to overcrowd the tray.
Serve fresh out of the oven, seasoned with Parmesan cheese. If you prefer, add a delicious garlic sauce.

A very big, but not very recent discovery of the family is a meatball recipe exactly to my taste: no frying, no flour, no other torments like this. Seen, somewhere in the winter, on TV, yes, on TV Paprika (yes, I don't remember the show). In the meantime, it has been modified and adapted, but the basic idea remains: meat + spices, mix, leave for 15 minutes in the fridge to make friends, form the meatballs (yes, without flour or breadcrumbs), put in the pan on baking paper, oven and ready!
So the recipe for baked meatballs. One of the options, that is.
- minced meat mixture, about 1 kg. Mixture means what you want your Lords to mean. Usually I make beef + pork in equal proportions. I did, however, only with pork (from safe organic pork in grandma's yard) and it was just as good. It also goes with poultry, but they come out a bit dry. I didn't try with lamb. Yet.
- a handful of crushed garlic cloves
- salt pepper for inspiration
- a handful of chopped sage
- a generous spoonful of dried thyme
- a large bunch of chopped green parsley
- a large carrot, given on a fine grater
- an egg (which you can safely give up, I still have this fixation with at least one shredded egg. it works without it).
All of the above mix well until smooth. Put the bowl in the fridge for about 15 minutes, enough to tidy the kitchen after preparing the ingredients. The meatballs are then formed, with a wet hand - I specify, without flour or breadcrumbs - and placed in the stove tray, on baking paper. The shirt:
They are put in the oven but I don't know how many minutes, they come back when they start sizzling, they keep until they are browned on both sides, and that's it. They will leave quite a lot of fat, but that's the beauty, because it's sure that fat comes out of them. They are good and warm and cold, they are great in sandwiches.
When I start to do (or when others do the work and I do them too) a round of 20 pieces ends in a day and a half. And no one complains about their stomachs, as they do about fried meatballs. Good job!

Fasting meatballs in the oven
Delicious and nutritious, fasting meatballs are a delight all year round, and they are also ideal for packaged snacks.
To prepare this recipe, you need the following ingredients:
- 3 young pumpkins put on a large grater and drained
- 2 boiled potatoes crushed with a fork
- 2 carrots put on a small grater
- half a cup of brown rice
- a large onion, finely chopped
- a bunch of finely chopped green parsley
- 3 tablespoons breadcrumbs
- 3 cloves of garlic given through the press
- salt and pepper.
In a hot pan put 4-5 tablespoons of cold-pressed rapeseed oil, carrot and a quarter cup of water. Turn the heat to medium and cover the pot with a lid. After 2-3 minutes, add the onion, stir and leave on the fire, stirring occasionally, until the water drops completely and the vegetables are soft. Turn off the heat and leave to cool.
Separately, bring some water to a boil, and when it starts to boil, add the rice. Let it boil for 2-3 minutes, then drain it and leave it to cool.
Mix the zucchini, hardened vegetables, rice, potatoes, garlic, breadcrumbs and parsley in a bowl. Season with salt and pepper and mix.
Take a spoonful of this composition and shape the meatballs - which you place in a tray lined with baking paper. Brush the meatballs with rapeseed oil with a brush. If you have a container with a spray pump, it's even better.
Place the pan in the preheated oven at 180-190ºC for half an hour or until the meatballs are slightly browned on top.
