The Kirkland Tap & Trotter is crafting its own house-made blue curaçao—a practice rarely seen in cocktail programs. Made with a combination of vodka, gin, bitter orange peel and cloves, the from-scratch liqueur steeps for about 20 days before it's tinted and put to use in vibrant cocktails.

  • 1 liter vodka
  • 1 liter Barr Hill gin
  • zest of 12 navel oranges
  • 4 tablespoons dried bitter orange peel
  • 32 cloves
  • 8 cups sugar
  • 6 cups water
  • blue food coloring
  1. Combine vodka, gin, orange zest, and dried bitter orange peel. Let that sit for 20 days.

  2. On day 20, add 32 cloves and let sit one additional day.

  3. Strain out the liquid through a coffee filter.

  4. Once strained, add 8 cups sugar and 6 cups water. Stir until dissolved.

  5. Add blue food coloring a few drops at a time until desired color is reached.
