"We wanted to do something fun and extremely refreshing for summer but also remain true to ourselves,” says Ben Poole, the bar manager at The Bluebird Cocktail Room in Baltimore. “You can choose any absinthe in our collection for this drink, though we recommend Absente. It’s sweeter than most and doesn’t take itself too seriously."

- 1 1/2 oz Absinthe
- 1 1/2 oz Simple syrup
- 3 barspoons Mint extract
- Garnish: Star anise pod
Add all the ingredients into a blender with 3 cups of ice, and blend until smooth.
Pour it into a highball glass.
Garnish with a star anise pod.
