This brunch cocktail, served at Barcelona’s popular Xixbar, is ideal for an early-morning pick-me-up.
- 1 1/2 oz Ginger-infused gin*
- 1 oz Fresh lemon juice
- 1/4 oz Fresh lime juice
- 1/2 Simple syrup
- 1/4 Egg white
- 2 drops Ginger bitters
- Club soda, to fill
- Garnish: Orange peel
Add all ingredients except the club soda into a shaker with ice and shake.
Strain into a highball glass over 2 ice cubes.
Fill with the club soda.
Garnish with an orange peel.
Serve with 2 bendy straws.
