This brunch cocktail, served at Barcelona’s popular Xixbar, is ideal for an early-morning pick-me-up.

  • 1 1/2 oz Ginger-infused gin*
  • 1 oz Fresh lemon juice
  • 1/4 oz Fresh lime juice
  • 1/2 Simple syrup
  • 1/4 Egg white
  • 2 drops Ginger bitters
  • Club soda, to fill
  • Garnish: Orange peel
  1. Add all ingredients except the club soda into a shaker with ice and shake.

  2. Strain into a highball glass over 2 ice cubes.

  3. Fill with the club soda.

  4. Garnish with an orange peel.

  5. Serve with 2 bendy straws.
