Rejuvenate yourself with a cream of broccoli soup! The recipe, which I found in Good Food magazine, I adapted a little to what I had around the house.

  • • 1 small cube of butter
  • • 2 tablespoons olive oil
  • • a quarter of celery
  • • 1 chopped onion
  • • 3 cups water or vegetable soup
  • • 8 bunches of broccoli
  • • 1 teaspoon of flour
  • • black pepper, nutmeg, ground cumin
  • • 1 tablespoon cream

RECIPE PREPARATION Cream of broccoli soup:

Melt the butter with a tablespoon of olive oil. Saute onion and celery until soft, then add broccoli, water (soup) and simmer until vegetables are cooked.


They mix well with the blender and add from the juice in which they boiled until the soup has the consistency of a thick cream.

Separately, in a small pot, fry the teaspoon of flour in olive oil, add the cream and a cup of juice in which they boiled the vegetables, then add little by little in the cream soup until it reaches the desired consistency (I like it more liquid).

Season with salt, pepper, a little nutmeg and ground cumin (to taste). Serve with croutons made of toast greased with butter mixed with garlic and parsley.

D. has liked cream soups since he was little (not that he would be big now). I only ate my first cream soup when I was about 20 years old. My luck is that he ate broccoli, peas, cauliflower from the beginning, I only started liking them late.

If the vegetables are blended, D. eats almost any kind of cream soup, even if it is made from vegetables that do not like them very much (tomatoes, for example & # 8211 I know, I know, tomatoes are fruits, not vegetables).

But the broccoli cream soup remains his favorite. If I add a little gorgonzola and some grated Parmesan cheese on top & # 8230 success is guaranteed. And homemade flax seeds and croutons, seasoned with salt, oregano and basil complete the decor.

I am the happiest, because the broccoli cream soup is very easy to make and it doesn't take me more than 20 minutes. Good appetite!

Broccoli and Spinach Cream Soup - Nourishing Recipe

This recipe is very easy on the stomach, 100% natural and ideal for those who are on a diet, as it does not contain fat and has very few calories. It brings to the body an important intake of vitamins, and has a slightly exotic aroma.

• 2-3 bunches of boiled broccoli
• 400 g of boiled beans
• 2 hands of young spinach
• 1 bunch of parsley
• 1 large onion
• 1 tablespoon of oil
• 2 cups of rice milk (or cow's milk)
• salt, pepper, dill and basil

Heat the oil in a pan to lightly sauté the onion. Let it simmer for 2-3 minutes until the onion scales turn golden. After boiling the broccoli for a few minutes, break it into smaller pieces (and keep a few pieces for later), which we add over the onion. We pour 2 cups of water in which we put the salt powder, and we mix. Let everything simmer for about 10 minutes.

After this interval, it's time to add the previously chopped spinach to the soup. Cover the pot with a lid so that the greens soften better. When the spinach has softened, add the pre-cooked beans and 1 cup of rice milk. Mix well, then pass the soup with a blender to obtain a delicious cream. If we want the cream soup to be thinner, we can add a little more rice milk. Sprinkle with salt, pepper, dill and basil at the end.

To give the soup a special consistency, we can add a few whole boiled broccoli florets at the end. Celery and carrots can be used instead of beans.

1. Clean and wash the vegetables well. Broccoli is dissolved in smaller bunches and boiled in salted water for about 40 minutes. After boiling, remove from the sieve to drain and sprinkle with lemon juice.
2. Separately, in another pot, put the rest of the vegetables and simmer with salt. Then the onion is thrown away, and the rest of the vegetables are blended with the broccoli.
3. In the vegetable cream, add the juice in which they were boiled and obtain a cream supper. Bring to the boil for another 10-15 minutes and, at the end, add the cream, diced Cedar cheese and butter. Season to taste with nutmeg, salt and white pepper and serve with flavored croutons. They are made of bread, cut into cubes, sprinkled with melted butter and garlic and parsley. Put in the oven to brown and then serve with cream soup.
