Easily made variant of the standard cottage pie recipe. Serve with some garlic bread and a side salad for a complete meal.

  • 1 (300g) tin sliced carrots, drained
  • 1 tablespoon dried mixed herbs
  • 150ml beef stock
  • 1 splash milk
  • 1 knob garlic butter or 1 teaspoon garlic puree

  1. Over a high heat, bring a saucepan of water to the boil and add the potatoes. Boil for 15 to 20 minutes until tender.
  2. Preheat the oven to 180 C / Gas 4.
  3. Meanwhile, fry the beef over a medium heat for 5 to 10 minutes in a dry frying pan until evenly browned and drain off the liquid generated.
  4. In a medium ovenproof dish, line the base with the sliced carrots. Layer the meat evenly on top of the carrots then sprinkle in the mixed herbs and pour over the stock.
  5. Drain the boiled potatoes and add a splash of milk and the garlic butter then mash until well mixed and fluffy. Spoon the mixture evenly over the beef layer to cover.
  6. Bake in the centre of the preheated oven for 25 minutes until piping hot. Remove from the oven and, if desired, place under the grill for a few minutes to brown the mash. Remove from the grill and serve.

Preheat oven to 450 degrees. In a pot of salted water bring potatoes, carrots, and 3 cloves garlic to a boil. Reduce to a rapid simmer cook until vegetables are tender, about 15 minutes. Drain and return to pot. Using a masher, mash vegetables until mostly smooth stir in 3 tablespoons butter. Season with salt and pepper. Finely chop remaining 2 cloves garlic set aside.

In a large skillet over high, melt remaining tablespoon butter. Add beef and brown, about 5 minutes. Remove meat from pan, leaving drippings. Reduce heat to medium-high, add onion, and cook until translucent, about 5 minutes. Add mushrooms and cook, stirring occasionally, until golden, about 10 minutes. Add chopped garlic, and cook until fragrant, about 1 minute. Return meat and collected juices to pan and stir in tomato paste. Cook, stirring, about 2 minutes. Stir in Worcestershire sauce and 1 cup water and bring to a boil. Reduce heat and simmer until liquid is slightly thickened, about 5 minutes. Season with salt and pepper.

Transfer meat mixture to a 9-inch square baking dish. Dollop mashed vegetables over meat and spread to edges of baking dish. Bake until juices are bubbling and topping is golden brown in spots, about 20 minutes. Let sit 5 minutes before serving.


Classic Beef Cottage Pie

This meaty Irish cottage pie recipe is a one pot dish made with ground beef, onions, garlic, carrots, herbs, and peas in a rich beef gravy and topped with mashed potatoes.

Substitute ground lamb for the ground beef and it would be called Shepherd's Pie instead of Cottage Pie.

Cook beef cottage pie in a skillet that can go directly from stovetop to oven, like stainless steel or cast iron.

If your gravy has too much liquid during cooking then turn up your heat to reduce it. Watch and stir it so the bottom of the pan doesn't burn.

It is easier to smooth the potatoes over the top of the meat mixture if both are cool. I make the potatoes first and let them cool and firm up while the meat is simmering. Then I let the meat cool 5-10 minutes before putting the potatoes on.

This cottage pie recipe is a variation of my friend Nicole's recipe, who sparked my interest in and taught me so much about cooking. It was one of her go to recipes, usually made with leftovers, and I ate it many days for lunch at her house. She would serve it with a crisp iceberg salad with a boiled egg & green onion dressing.

This week, a short series about water.

If there's anything I've learned over the years, it's don't take anything someone tells you, at face value. Experience drawn from being a coach and instructor in the fitness world, trying (my goodness, far too many) of the diet plans out there, and studying holistic nutrition.

A few years ago, when I started my journey toward better health, one of the first things I did was join a gym and was quickly introduced to one of the fitness world's biggest mantras

“Water, water, water. Drink your water. It's important to flush all of the toxins and fat out of your system.”

Day one, I was handed a big plastic bottle, which I proudly carried with me, keeping diligent records of the number of times it was filled. Certainly, I was winning points with my coach, but if truth-be-told, a gallon to a gallon-and-a-half a day wasn't making me feel the best.

I was always in search of the potty, and a good night's sleep became hard to come by. I also noticed I'd become oddly obsessed with the amount I was or wasn't getting in.

My inner voice oscillated, “Being well-hydrated is a good thing” and “Can this be right? Keep drinking, even when you're not thirsty?”

The other extreme came in January of this year when I was among a group of 50 Hawthorn students who were chosen to try Lyn Genet's “The Plan.”

Not only is The Plan very specific about the amount of water a person should drink, but the timing as well. To find your daily allotment in ounces, one divides their weight by two, and nothing should be taken in (either food or water) after 8 pm.

For the most part, I did pretty well the first three days, although admittedly I struggled with thirst later in the evenings, especially on work nights when I'm awake until 1 or 2 am.

The morning of day four, things took a slight turn for the worse, when I awoke with such an incredible thirst.

Twenty-four ounces later, I thought I had it quenched, only to realize I may have shorted myself for the rest of the day(!) By three o'clock, with my morning workout, and afternoon walk out-of-the-way, sadly my allotment of water was

Things rapidly went downhill on day five, when I started not feeling well in general. By day six, my mouth was incredibly dry, and my sweet husband was beginning to question whether any of this was good for me.

Day seven, I stopped following The Plan and went back to drinking on demand. It was nearly two weeks until I felt like myself again.

It took not feeling well at either extreme, to forge my own path. Granting permission for listening and trusting my body, and what felt best for me.

Along the way, as I've studied further, many of my questions have been answered. All reinforcing what my body was telling me

When the temperature takes a permanent nosedive, rich, and delicious comfort food like shepherd's pie is one of the first things I crave. A square, with its blanket of mashed potatoes and savory meat and veggie filling, is a very happy thing.

This is one of the classics with endless numbers of variations. Make it with beef, lamb, or both. I imagine it wouldn't be too hard to substitute the meat with quinoa and lentils, for an equally hearty, and wonderful vegetarian version

We really like this classic combination of veggies in the filling, but any bits you have in the fridge would be great. Think left-over roasted squash, beans, cauliflower florets, edamame, or even something like sautéed cabbage would serve you well here.

Messing it up is hard to do, no matter what you throw in it.

A brief note about the history of the Shepherd's Pie. It comes to us from England and is traditionally made with lamb or mutton. Here in the states were more of a beef-eating culture than a lamb, and when one is served “Shepherd's Pie” here, it's most often made with ground beef.

In England (and Australia and New Zealand) the beef dish is known as a “Cottage Pie” and the lamb dish as “Shepherd's Pie.” Whichever name it goes by, it's essence remains. A layer of cooked meat and veggies, topped with mashed potatoes, and baked in the oven until the potatoes are well browned

Cottage Pie

Cottage Pie is another dish I learned while living in Britain. Creamy mashed potatoes are mixed with mozzarella cheese to form the top crust. This British pub-food staple has been my family’s favorite especially my husband. But wait! You might also think of another dish similar to this, which is shepherd’s pie. There is a difference between “cottage pie” and “shepherd’s pie”, and it’s in the meat. Shepherd’s contains lamb, and “cottage” usually applies to one made with beef.

The mashed potatoes and mozzarella cheese top crust is just lovely!

Deliciously comforting and satisfying, this family favorite also contains healthy vegetables that even picky eaters will love! Let it bubble away in the oven till golden brown. Smother it with my gravy recipe and it’ll just be lovely!

In honor of St. Patrick’s Day I’m sharing with you a wonderful and hearty dinner recipe mostly made from meat and potatoes. Cottage pie, a very popular and common dish from the late 1700’s is made from a potato crust and seasoned beef. Its familiar but younger (1877) cousin, Shepherd’s pie, is a very similar dish except made with lamb. Many people confused the two pies and think of them synonymously with each other. Both types of meat pies originated from Ireland and the UK where the dish was considered a peasant’s meal because it was an economic way to use leftover roasted meat.

Pair this dish with a nice side salad and a nice slice of Irish Soda Bread and you have the perfect family meal to savor on a cold winter’s evening. This comfort food dish can easily be divided between two pie plates, baked, and then frozen so you can have a second meal in the freezer when needed. And if there are leftovers, this dish is just as wonderful the next day.

Pour the wine into the pan, bring the mixture to the boil and cook for 4-5 minutes, or until most of the liquid has evaporated, then sprinkle over the flour and stir well for a few minutes to prevent any lumps from forming.

Gradually add the beef stock to the pan, then add the cold water, tomato purée and dried herbs. Bring the mixture to a gentle simmer, then cover with the lid and cook over a low heat for 25-30 minutes, stirring occasionally, until the mince is tender and the sauce has thickened. Season with a splash of Worcestershire sauce and salt and freshly ground black pepper. Remove from the heat, spoon into a 1.5 litre/2 pints 13fl oz ovenproof dish and set aside.

Preheat the oven to 200C/400F/Gas 6.

Half-fill a large pan with cold water. Add the potatoes and bring to the boil, then reduce the heat to a simmer and cook for about 15 minutes, or until the potatoes are very soft.

Drain the potatoes, then return to the pan set over a medium heat. Cook for a few seconds to drive off any excess moisture, then remove the potatoes from the heat. Add the butter, milk and cheese and mash until smooth and creamy. Season with salt and freshly ground black pepper.

Spoon the mash over the mince mixture in the ovenproof dish, working towards the middle from the outside. Smooth with a palette knife. When all the mince is covered with mash, create patterns on the surface using a fork.

Place the dish on a baking tray and bake in the centre of the oven for around 25 minutes, or until the potatoes are golden-brown and the filling is bubbling up around the edges. Serve with freshly cooked green beans or shredded Savoy cabbage.


Method

For the filling, heat the olive oil in a large frying pan over a medium heat and fry the onion and garlic for five minutes or until softened. Add the mince and cook for five minutes, stirring occasionally, or until browned and cooked through.

Stir in the rest of the filling ingredients, season with salt and freshly ground black pepper and set aside to cool.

Preheat the oven to 180C/350F/Gas 4.

For the suet pastry, sift the flour into a mixing bowl with the suet and season with salt and freshly ground black pepper. Gradually mix in about four tablespoons of cold water, or until you have a moist but firm dough.

On a lightly floured work surface roll the dough out to a 2mm thickness.

Generously butter two individual pie dishes then line each with the suet pastry, so that it covers the base and sides completely. Divide the filling mixture between the two dishes.

For the pie crust, roll out the shortcrust pastry on a lightly floured work surface to a 2mm thickness and use it to cover the two pies, pushing down the edges to seal. Brush generously with the egg yolk and make a hole in the middle of the lid to allow steam to escape.

Place the pie dishes into a deep-sided roasting tin and pour in enough boiling water to come halfway up the sides of the pie dishes, taking care not to get any water on the pastry. Transfer to the oven and cook for 20-30 minutes, or until the pastry is crisp and golden and the filling steaming hot.

Meanwhile, for the mashed potatoes, steam (or boil) the potatoes for 20 minutes or until tender. Scald the milk then mash the potatoes with the hot milk, butter and plenty of salt and freshly ground black pepper until smooth. Drizzle with a little chilli oil, if using, and keep warm.

For the parsley liquor, melt the butter in a saucepan over a medium heat and whisk in the cornflour to make a paste. Gradually stir in the stock, bring to a simmer, then stir in the parsley and garlic and stir until thickened and smooth.

Serve the hot pies with the mash, parsley liquor and jellied eels on the side.

If there's time, make the filling the day before assembling the pie to allow the flavours to come together.
