Brown countertops:

In a bowl, mix the yolks with the butter, at room temperature.

Add milk, cocoa, essence, then baking powder and flour.

We mix the egg whites with the sugar.

We incorporate them over the yolk composition, with a palette, with light movements. Divide the composition evenly into two bowls.

Wallpaper a 34/36 cm tray with baking paper, pour the first part of the composition.

Put the top in the hot oven, at a suitable temperature, for 12-14 minutes.

When the first top is ready, take it out of the oven and do the same with the other. Let them cool.


White countertop:

Mix the yolks with the sugar until they double in volume.

Add flour, baking powder and grated orange peel.

Beat the egg whites with a pinch of salt, incorporate them into the above composition, using a spatula.

Wallpaper the same tray with baking paper, pour the composition.

Put the top in the hot oven, at a suitable temperature, for 20-25 minutes, until it is baked. We do the test with the toothpick and when it is ready, we take it out of the oven, let it cool.


Cream:

In a bowl, mix the starch with the sugar, the vanilla bean seeds, a little milk. Mix well so that the starch does not remain lumpy.

We boil the rest of the milk and when it boils, turn the heat to low, pour the starch composition.

Stir continuously until it thickens like a pudding, then remove from the heat, cover with foil and let cool.

When the cream has cooled, mix it a little, then put the butter at room temperature, grated orange peel and mix until you get a frothy cream.


In the tray where I baked the tops, we assembled the cake.

Put a brown sheet, half the cream and level it.

We put the white top, the rest of the cream that we level and again the brown top.

Glaze:

In a saucepan put the broken chocolate pieces with whipped cream.

Transfer them to the heat, let the heat rise, and stir continuously until the chocolate is melted.

Remove from the heat, let it cool so that it is slightly warm and pour it lightly over the cake.


Let it sit for about an hour at room temperature, then put it in the fridge.

After 4-5 hours, portion and serve.
