Your Thanksgiving Meal Is Pricier This Year

Thanks to the drought, here are the foods you can expect to pay more for this Thanksgiving

Your grocery bill’s going to be a little higher this year if you’re planning on celebrating Thanksgiving with traditional holiday foods.

The Wall Street Journal published pricing data from the Dining Alliance — a food service purchasing organization based in Allston, Mass. — for popular fall foods, comparing this year’s costs with last year’s and showing the drought’s effects on these differences.

According to the data, you can expect to be paying:

• 20 percent to 30 percent more for apples and apple cider, partly because the average U.S. apple farmer is picking about 50 percent less than last year
• 5 percent to 10 percent more for your Thanksgiving turkey
• 3 percent to 5 percent more for stuffing
• 3 percent more for candy, including candy corn, since the high-fructose corn syrup used in candy relies on — yup, you guessed it — corn, which costs more now partly because of the drought’s effects on the crop. Corn prices rose about 35% between June 18 and Aug. 29, and this dramatic increase is affecting just about everything, including meat since it’s used to feed livestock. The Dining Alliance’s chief executive, John Davie, told WSJ to expect a rise in meat prices.
• 5 percent more for dairy, butter and milk, partly because the drought has taken a toll on the health and output of cows.

And don’t expect these prices to start dropping any time soon. "We’re still telling our members the real impact of the drought won’t be felt until February-ish of next year," Davie told the WSJ.

Overall, you’ll probably only be paying about 5 percent more than in 2011 because prices were exceedingly high last year. However, the Dining Alliance estimated that this year’s prices are probably about 15 percent higher than what they would have been had we not had the drought.

The good news: Pumpkins apparently withstand droughts well, so you don’t need to pay more for your pumpkins if you want to make these pumpkin recipes or these pumpkin seed recipes. And your sweet potato casserole won’t cost any more than it did last Thanksgiving.

Thanksgiving dinner meals may be a bit pricier this year due to demands

Some shop owners say it's due to more people eating at home.

As people prepare for holiday festivities, you may notice some grocery store meats are a bit more expensive than they have been recently.

We learned it's because more people are eating at home than going out and stores are yet again trying to keep up with the demand.

This week, many people are going out and shopping for their holiday meals, but they're not picking up and taking it home just yet. They're trying to see what the prices are looking like and many people say you just have to shop around.

"I'm evaluating the turkeys right now. We're going to try and have that for Thanksgiving. We don't know if we want to get one now or wait a little closer to where it'll be thawed out around the house," said John Bradford.

Bradford, like many other shoppers at Hometown Market, came out to shop for regular groceries on Wednesday, but he also was checking out items for a Thanksgiving meal.

You didn't see a lot of holiday staples like turkey and dressing in baskets. Lots of folks were surveying how much bang for your buck can you get, because across the U.S., the price of meat is going up.

"Leg quarters on sale, hams. different places, different stores, I just left one store here," said one man.

The store manager told WAAY 31 at one point, they had a surplus of meat and everything was selling fine. But it's now 8 months later, and he's nervous he won't be able to sell as much as he tries to keep up with the pricing to get the meat from the butcher to the store.

To accommodate, he has to up the prices a bit.

Across the U.S., Thanksgiving meals are up nearly 10% higher than they were last year.

At the market, turkey being the highest, with an increase of about $5 at the store. Chicken and some pork selections have gone up nearly $2 or $3, and beef essentially has no change.

With Thanksgiving just a few days away, people say they're doing the best with what they have.

"Just being thankful. We can't be with our families like we want to and I know personally, myself, I love all my family but we can't get together like we used to," said one man.

"Of course this year, we're not going to be able to do that due to the COVID situation, but it's a big deal. I put it right up there with Christmas," said Bradford.

The store manager told us if you're looking to buy your Thanksgiving turkey, your best bet may be to go with the frozen goods as those are selling really well right now.


Chef Kelli's recipes for downsizing your Thanksgiving meal this year

(FOX 2) - Things may be a bit quieter as this year with a more intimate backdrop for entertaining. It may seem a bit somber to go from having a large crowd of extended family and friends to a smaller pod gathering amid the pandemic.

Tips for Micro Thanksgiving 

  1. Downsize your menu to the favorite 4-6 dishes, this might be a great opportunity to dump menu items that you never really liked but made for those one or two family members.
  2. Minimizing also squashes the having way too many leftovers and you can just plan a clean slate for a low-key Friday food fest.
  3. A little cheat is not the end of the world, start with a quality pre made product such as cranberry relish and add some orange rind and ginger, use a stuffing mix that you doctor up with sautéed apples, sausage and onions or whatever your stuffing vibe is.
  4. Ditch the whole turkey for a super nice and easy peasy skin on turkey breast
  5. Instead of a large casserole try small, sweet potatoes with pecans and a few marshmallows or little sweet potato savory “casseroles” created in muffin cups smaller induvial portions are a win.
  6. Take a classic dish like mash potatoes and have a few condiments each person can stir in to make their own fun creation, people like being a part of an myo situation pesto, roasted garlic, horseradish, cheddar and parmesan would be fun to name a few.
  7. Never a bad idea if you want to try something new with a smaller audience, this year my tribe is getting roasted cauliflower with raisins & almonds!
  8. Less stuff less pans! Do not overlook thanksgiving sheet tray dinner (tops below)
  9. Trade I big rich pies for induvial pie jars or parfait trifle of your liking.
  10. Take advantage of where you might be lacking in a rowdy loud group as an opportunity for extra family time with a planned game or a movie night.
  • 3 tablespoons unsalted butter, at room temperature
  • 1 tablespoon chopped fresh parsley leaves
  • 8-10 sage leaves
  • 6-8 medium sliced orange slices
  • 2 teaspoons poultry seasoning
  • 2 cloves garlic, minced
  • sea salt and freshly ground black pepper, to taste
  • 1 (2-pound) skin-on, boneless turkey breast

Directions
Mix fresh chopped parsley, poultry seasoning, and garlic then generously rub on turkey under skin, place orange slices and sage leaves in a pattern under skin. 
Place on top of jeweled stuffing and roast in 450-degree preheated oven for 15 minutes and lower temperature to 350 for an additional 35-45 minutes until thermometer reads 160-165.  Let settle for 15 minutes before slicing covered with foil. 

  • 2 TB unsalted butter
  • 1 lb nitrate free pork or turkey sausage (mild Italian flavor profile)
  • 1 med Spanish onion diced
  • 1 bulb fennel

  1. Melt Butter in large sauté pan add onion & fennel and sauté for 3-4 minutes over medium heat.
  2. Add pear and dried fruits, spices, stock, and brown sugar and continue to simmer for 4-5 minutes.
  3. Mix bread cubes with cooked fruit mixture & adjust seasoning.
  • 1 1/2 pounds brussels sprouts, halved
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons reduced sodium soy sauce
  • 1 tablespoon maple syrup
  • Sprinkle of sea salt & pepper

Mix all ingredients and add to turkey roast sheet tray 20 minutes before turkey turkey is done (about the 40-minute mark) 


Serve Up These Tasty Thanksgiving Dishes

Honey Cinnamon Sweet Potatoes

  • 4 sweet potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
  • 1/4 cup honey
  • 2 teaspoons ground cinnamon
  • Salt and freshly ground black pepper
  • Preheat oven to 375 degrees F.
  • Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.
  • Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.

Sweet & Tangy Balsamic Roasted Brussel Sprouts

  • 1 1/2 pounds Brussels sprouts, trimmed and cut in half through the core
  • 4 ounces pancetta, 1/4-inch-diced
  • 1/4 cup good olive oil
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon syrupy balsamic vinegar
  • Preheat the oven to 400 degrees.
  • Place the Brussels sprouts on a sheet pan, including some of the loose leaves, which get crispy when they’re roasted. Add the pancetta, olive oil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper, toss with your hands, and spread out in a single layer.
  • Roast the Brussels sprouts for 20 to 30 minutes, until they’re tender and nicely browned and the pancetta is cooked. Toss once during roasting.
  • Remove from the oven, drizzle immediately with the balsamic vinegar, and toss again. Taste for seasonings, and serve hot.

Traditional Green Bean Casserole

For the topping:

  • 2 medium onions, thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tablespoons panko bread crumbs
  • 1 teaspoon kosher salt
  • Nonstick cooking spray

For beans and sauce:

  • 2 tablespoons plus 1 teaspoon kosher salt, divided
  • 1 pound fresh green beans, rinsed, trimmed and halved
  • 2 tablespoons unsalted butter
  • 12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon freshly ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half-and-half
  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan.
  • Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use.
  • Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.

How To Use Weed in Your Thanksgiving Meal This Year

Call this Thursday Danksgiving, Thanksgrooving, or come up with your own weed-inspired nickname for Thanksgiving just know that with the ever-increasing legality of cannabis in the U.S., there are endless options of how to incorporate reefer into your holidaze meal.

The day before Thanksgiving is gaining acceptance among those in the cannabis culture as Green Wednesday--its version of Black Friday, when consumers stock up (and consume) marijuana for the following day. In 2019, Eaze, the California-based "Uber of weed" delivery service saw a 147 percent increase in business on Green Wednesday from the year before. Expect that number to go up even higher in the beyond-stressful year 2020--especially with disapproving elders around--so call your "guy" early. And if this is your first time experimenting with putting a pot spin in your cooking, just know it's relatively easy, as long as you follow the steps carefully.

While there are other methods of cooking with weed, the most common involves cannabis-infused butter, aka cannabutter. Since pretty much all the most popular Thanksgiving dishes involves butter--and lots of it--cannabutter can thus be substituted for butter or used in conjunction with it in some--or all, if you really want a Thanksgiving to not remember--the day's recipes. (Once you know how to make cannabutter, you can also make popular staples like pot brownies and cookies throughout the year.) Mashed potatoes, gravy, green beans, stuffing, pumpkin pie, and even turkey are all cooked using butter! But fear not if you want to go light on the cholesterol, we will include some butter substitutes at the end of this article.

Though cannabutter is rather easy to make, do know that it requires a little more than just mixing some buds in a bowl with a stick of Land O'Lakes. The most important step of making cannabutter is activating the psychoactive potential of THC. Skipping this step will leave your butter with a non-intoxicating acidic cannabinoid called THCA. When you're smoking or vaping, the cannabis heating up converts THCA to THC in a process called decarboxylation. You'll also need to do the same to make cannabutter, otherwise you may as well save yourself the time and smoke before eating. But don't let the complicated name fool you: Decarboxylation is basically just heating cannabis at a low temperature.

Here is a simple recipe for cannabutter, though remember you will need to adjust the amount of cannabis used depending on its potency. If you are not familiar with the strain being used, test it beforehand. Also, unless you're waking up really early or eating Thanksgiving dinner late in the day, make this cannabutter the night before--it does take a few hours.

Cannabutter Ingredients

--1 cup of butter

--1 cup ( approximately 8 grams) of ground cannabis

1. Decarboxylating the cannabis. Preheat oven to 245ºF. Place cannabis buds on a non-stick tray and cover with parchment paper. Cook for 30-40 minutes. Every 10 minutes, lightly shake the tray to allow the buds to heat equally.

2. Remove the cannabis from the oven and let cool to room temperature.

3. Grind the decarboxylated cannabis coarsely with a hand grinder. (If you don't own a marijuana grinder, you can use a clean coffee bean grinder.)

4. Melt the butter. Add 1 cup of water and 1 cup of butter into a pot or saucepan. Simmer on low until the butter melts. Slowly add drops of water throughout this process to help regulate the temperature and prevent the butter from scorching.

5. Add the ground cannabis when the butter begins to melt.

6. Simmer. Maintain low heat between 160ºF and 200ºF and let the mixture simmer for 2 to 3 hours, stirring occasionally. Do not allow the mixture to come to a full boil--lower heat if it does.

7. Strain the cannabutter. Line a funnel with cheesecloth and put it on top of a jar. Once the butter has cooled, pour it through the funnel into the jar, allowing it to strain.

8. Refrigerate the cannabutter. Place the jar of your merry-making concoction in the fridge for about an hour. If there is any excess water remaining at the bottom of the jar after it cools, hold the butter in place with a knife and drain the water out.

**Slow Cooker Directions. Yes, you can use a slow cooker for making cannabutter. Just add the ground cannabis, butter, and a little bit of water into the slow cooker and cook on low for about three hours--stirring occasionally--then strain.

***Watch your dosage. The difference between a laidback day of eating and watching television can easily spiral into a paranoid fever dream spent with the horse Caligula made a senator if the wrong amount of cannabutter is consumed. (That's a exaggeration, but you get the point.) Even if you tested the strain beforehand and it was mild, the end product's potency could be higher depending on how long and hot it was cooked. This is why it's a good idea to try a half a teaspoon or less on a cookie or cracker and see how it hits you after an hour. You can then do the guesswork of the ratio of cannabutter you should use. Remember it's best to err on the side of caution--you can always add more later.

While butter is the preferred ingredient to combine with THC, you can also use a simple recipe for a variety of fatty oils--olive, coconut, avocado, etc. This also opens up the possibilities of enlivening your pre-dinner salad.

No matter what weed-infused dish or dishes you decide to make, just please exercise caution. Try to handle most of the cooking prior to partaking.


Vegetable Sides and Salads

If you’re hoping to sneak some greens into your Thanksgiving meal, salads are easy to prepare in small amounts. Our warm Brussels sprouts salad is perfect for fall, dressed with a vinaigrette made with warm bacon fat, shallots, honey, and sherry vinegar that pairs well with the sweet, nutty char of the sprouts.

When it comes to a good ol’ green bean casserole, meanwhile, it can easily be made smaller in much the same way—by splitting the ingredients in half and using a 10-inch skillet. What’s best is that the scaling doesn’t sacrifice quality, leaving you with a casserole that incorporates fresh green beans, freshly fried onions, and a homemade mushroom sauce—none of the canned stuff in sight.


Thanksgiving dinner a little pricier this year

WASHINGTON - Maybe you should consider going to your aunt's house instead of hosting Thanksgiving: It's going to cost a bit more to put a traditional dinner on the table this year.

The American Farm Bureau Federation (AFBF) reported Thursday that a meal with turkey and all the trimmings will cost about 13 percent more this holiday.

It estimates the average cost to make a meal for 10 people is $49.20. That's $5.73 more than last year's average of $43.47.

According to the AFBF, 2010 also saw a price increase from previous years, but noted that 2009 had much lower prices than average.

It's a result of soaring costs for commodities that are raising prices for food makers, grocers and consumers.

The costs for nearly everything from cranberries to milk are up. The biggest price hike is for the main course: a 16-pound turkey costs 4 percent more this year at $21.57. Last year's 16-pound turkey actually saw a price decrease from the previous year. An AFBF senior economist attributed the price increase to increased demand for the bird both domestically and internationally.

You might also consider skimping on the pumpkin pie. A 30-ounce can of pumpkin pie mix went up up 41 cents, while a half a pint of whipping cream went up 26 cents.

Still, the classic Thanksgiving meal comes in at about $5 per person.

"The cost of this year's meal remains a bargain, at just under $5 per person," said AFBF President Bob Stallman, a rice and cattle producer from Texas, said in a statement. "The quality and variety of food produced for our dinner tables on America's diverse farms and ranches sets us apart from our contemporaries around the world. It is an honor for our farm and ranch families to produce the food from our nation's land for family Thanksgiving celebrations."
