This is a very easy, basic soup recipe that I use during the colder months. You can use vegetable stock if you prefer.

- 1 litre beef stock
- 200g pumpkin, diced
- 200g carrots, sliced
- 200g potatoes, peeled and sliced
- salt and black pepper, to taste

- In a deep saucepan, combine all the ingredients and simmer 30 minutes until the vegetables are cooked. Leave to cool down before blending in a food processor.
- Season with salt and pepper. Reheat and serve.
