But there's one more thing that should make that list, and that is the return of spring lamb. True spring lamb is so good that it will likely convince even the most reluctant eater to give it a try. It's a far cry from the gamey, fatty, strongly flavored meat that often makes people shy away from lamb after their first taste. Instead, it is tender, lean, and delicately flavored, traditionally completely milk-fed, often grass-fed in practice. So why is spring lamb so different?

Back in the day in the Old Country, as they say, baby lamb would be born in the spring. Roman shepherds would slaughter them at one to two months of age, at which point their diet still consisted completely of their mother's milk. This ancient custom heralded the coming of spring, and spring lamb was often the timely centerpiece of the Easter celebration. No part of the animal was wasted.

Today, it can be hard to find true spring lamb — most supermarkets don't carry it, as most of them carry American- or New Zealand-sourced lamb that is sometimes up to 11 months old if supplies are tight. In terms of diet, they are also raised similarly to feedlot cows — started on grass but finished on grain, which leads to more marbling within the meat as well as more fat around it.

So where can you find true spring lamb? It's tough, and the best you can hope for is to get as close as possible to the ancient ideal of a milk-fed animal. Look to specialty butcher shops locally or farms like Jamison Farm, which ship nationwide. Their lamb is completely grass-fed and slaughtered at three to six months of age, after which the meat is dry-aged for seven to 10 days.

If you manage to find a local butcher shop that has it, make sure you know what you're getting. Generally, spring lamb will have smaller bones owing to its younger age, less marbling, and just a thin layer of fat. Australian lamb can also be a good bet, since nearly all of it is grass-fed, mostly shipped fresh, and younger than its American counterparts.

So to make the best of this somewhat difficult-to-find ingredient, we've rounded up eight of our best spring lamb recipes for you to try. Here are the highlights.

Recipe Summary

  • 1 (8 ounce) package lasagna noodles
  • 2 teaspoons vegetable oil
  • 10 ounces ground lamb
  • 1 teaspoon dried sage
  • 1 teaspoon thyme
  • ½ teaspoon salt

  • 1 bunch fresh mint
  • ¼ cup pine nuts
  • 6 tablespoons olive oil

Bring a large pot of lightly-salted water to a rolling boil. Cook the pasta in the boiling water uncovered until cooked through but still firm to the bite, about 12 minutes. Drain well in a colander set in the sink. Cut each sheet in half, width-wise.

Heat the vegetable oil in a skillet over medium heat cook the lamb in the hot oil until evenly browned, 7 to 10 minutes. Season with the sage, thyme, salt, and pepper. Remove from heat stir the goat cheese into the cooked lamb. Spoon about 1 tablespoon of the lamb mixture into the center of each of the lasagna sheets and roll into a cylinder arrange on a plate.

Blend the mint, pine nuts, and olive oil in a blender until finely chopped but not liquefied drizzle over the rolls to serve.

The following recipe is inspired by a recipe shown recently on the French Tele Matin. In that TV program, the cook made the dish with souris d’agneau, lamb shanks. Because lamb shanks are difficult to find in our Nice supermarket I used slices of lamb leg, tranches de gigot. Slices of lamb leg can be cooked pretty fast, but lamb shanks need a long and gentle cooking for maximum flavour and tenderness. Microwaving the carrots and turnips will further reduce the cooking time. Sometimes the dinner has to be cooked fast and simple, but there is no need to sacrifice taste or healthy ingredients.

And I used fresh lemon, not citron confit, as the idea with these spring recipes is to use fresh new ingredients that again are available after winter.

2 nice and fat-free slices of lamb leg, tranches de gigot
2 carrots, sliced
2- 3 turnips, chopped
1 medium onion, chopped
1 tbsp rapeseed oil
Freshly ground black pepper
50 ml white wine
Parsley and mint to decorate

For the marinade:

2 tbsp olive oil
2 cloves garlic, peeled and sliced
A handful of mint and parsley, washed and finely chopped
1 lemon, peeled and chopped

Place the slices of lamb leg in a shallow dish. Divide the garlic slices and chopped lemon over the lamb. Cover with chopped herbs and sprinkle with olive oil. Cover with foil and marinate one hour in the fridge.

Heat 1 tbsp rapeseed oil over a medium heat in a heavy casserole. Place the slices of lamb leg in the casserole, with the herb side up, and sauté for about 5 minutes. Add the chopped onion and sauté for about 10 minutes. Add the white wine and black pepper. Then reduce the heat to simmering.

Slice the carrots. Peel and chop the turnips. Microwave the carrots and turnips until they are soft. Add the vegetables in the casserole and continue simmering, partly covering the casserole, for about 5 - 10 minutes.

Divide the lamb and vegetables on the plates and decorate with fresh herbs.

1 leg of lamb (about 3kg)
1 tbsp oil
50g butter
2 litres sheep’s milk (or cow’s milk)
2 bay leaves
1 onion studded with 6 cloves
A head of garlic, cut in half across the cloves
A few sprigs of thyme
A grating of nutmeg
A twist of orange peel
Salt and black pepper

1 Preheat the oven to 150C/300F/gas mark 2. Season the leg of lamb with salt and pepper, then brown in a large frying pan with the oil and butter. Place in a large, ovenproof casserole with a lid.

2 Pour the milk into a saucepan with the bay leaves, the clove-studded onion, garlic, thyme, nutmeg and orange peel and bring to a simmer.

3 Pour the milk mix over the lamb in the casserole and cover with the lid. Put in the oven and cook for 4 hours or so, until the meat is falling off the bone.

4 Serve on the bone at the table, and allow your guests to carve the meat with a spoon.

This dish of roasted lamb shoulder with vegetables is all about the beauty of spring, as lambs are born and asparagus, sunchokes and artichokes are at their peak. Choose the best spring produce you can find, roast briefly and arrange around the lamb.

JFE® Note: In Sephardic communities, unlike among Ashkenazic Jews, it is common to eat lamb on Passover. Note that fennel is kitniyot. If you don’t mix meat and fish, omit the anchovies and use a drizzle of olive oil instead, or replace the anchovies with black olives.


Chocolate pots with orange and cardamom

Orange and cardamom combine to make this an Easter-time treat with a difference: aromatic and sweetly spiced, with a hint of something exciting. Quick to make, these will take a few hours to set.

Makes 6-8
8 cardamom pods
100ml milk
200g good quality plain chocolate
1 orange
2 eggs
250ml double cream

1 Slit the cardamom pods open and prise out the seeds. Crush the seeds a little with the back of a spoon or in a pestle and mortar and put in a small pan with the milk. Slowly bring to boiling point, then remove from the heat and leave to infuse while you are preparing the other ingredients.

2 Break up the chocolate and put it into a bowl, cover the bowl with clingfilm and place over a pan of boiling water – try not to let the water touch the bottom of the bowl as this will make the chocolate lumpy. Leave the chocolate to melt.

3 While the chocolate is melting, grate the zest of the orange and squeeze out its juice.

4 Separate the eggs, then use a whisk to beat the egg yolks until they turn thick.

5 When the chocolate has melted, stir in the egg yolks along with the orange zest and juice, and strain in the milk.

6 Whisk the egg whites until they form soft peaks and fold them into the chocolate mixture using a large metal spoon.

7 Whisk the cream until it forms soft peaks and, using the metal spoon again, fold it into the other ingredients.

8 Pour the chocolate into a large dish or distribute it between six or eight small ramekins or pots (espresso coffee cups will do). Cover with clingfilm and refrigerate for a couple of hours or overnight until set.
