That was last year, when I was writing # 33 and hugging my friends without being afraid of dangerous viruses. This year is another story. Each of my loved ones stays quietly in their homes and prays that the pandemic will pass as soon as possible and well for everyone.
I received my congratulations from a distance and my wish came true, which I did not even dare to make. In conclusion, we had a wonderful day!

Chocolate and pomegranate cake
Dough for the countertop: 50 grams of brown sugar, 1 tablespoon of instant coffee beans, 3 medium eggs, 1 medium egg white, a vanilla pod or a teaspoon of vanilla extract, 25 grams of wholemeal flour, 50 grams of flour with leavening agent, 25 grams of cocoa powder, 1 teaspoon baking powder, a pinch of salt
Chocolate cream: 100 grams of dark chocolate (minimum 70% cocoa), 50 grams of milk chocolate, 200 grams of low-fat cream cheese (ricotta, philadelphia, etc.), 75 milliliters of milk skimmed, 25 grams of powdered sugar
Ssyrup: 2 tablespoons sugar
Decor: powdered sugar, 2 tablespoons pomegranate seeds, fresh mint leaves.
The oven is heated to 190 degrees Celsius.
A rectangular baking tin measuring 20.5 cm x 31 cm is greased with oil and lined with baking paper.
Grind the sugar and coffee for a few seconds. After the dough has cooled, turn it over on a towel or other baking sheet, remove the paper on which it was baked from the back, grease with syrup and roll. Unwrap the countertop again, being careful not to break it, and grease it with half the amount of cream. Roll, cover with cream.
Put the chocolate roll on a plate, sprinkle with sugar, decorate with pomegranate seeds and mint leaves.

This time I chose an ice cream with a refreshing mint flavor. Spirulina powder gives this ice cream an intense green color to match the taste, and comes with many health benefits. It has antioxidant and anti-inflammatory, anti-cancer, anti-allergic (allergic rhinitis), anti-anemic, energizing properties, lowering blood pressure and triglycerides and regulating blood sugar levels.
One teaspoon of spirulina powder contains:

Put the cashew nuts and soak them in a bowl of water (enough to cover them) and leave them in the fridge for 4-6 hours (or overnight).

Pour the composition into pans, glasses or cups and leave it in the freezer for 3 hours. Alcohol has the role of preventing the formation of ice needles. However, to make it finer, remove the ice cream after 30 minutes of freezing and mix it vigorously with the spoon. Do this twice.
Remove the ice cream from the freezer at least half an hour before consuming it.
You can also add small pieces of dark chocolate (high in cocoa), grated chocolate or a few tablespoons of cocoa powder to this recipe.

- 300 g of champagne biscuits
For the cream:
- 1 ou
- 150 g of sugar
- grated lemon peel
- 200 ml of water
- 30 g of flour
- 200 g cream
- 50 g dark chocolate
- 3 kiwis
- 2 tablespoons cocoa powder
- mint leaves
Method of preparation:
1. Rub the egg with the sugar and grated lemon peel until you get a creamy mixture. Add the flour, water and boil the composition in a bain-marie, stirring constantly, until it thickens. Leave the cream to cool. In the cooled cream, mix the grated chocolate and incorporate the cream, stirring gently.
2. Place a row of biscuits in a rectangular Jena shape, add a little cream to better bond the biscuits together, then a row of diced kiwi, continue with another row of biscuits, cream and then kiwi fruit.
3. At the end, add a thicker layer of cream and garnish with sifted cocoa powder on top and mint leaves. Leave the kiwi and biscuit cake to cool for a few hours, before serving cut into 7/8 cm rectangular pieces.
