I know it's not seasonal, but I got some really nice mushrooms!
Mushroom stew is a traditional, classic Romanian food, suitable for the fasting period. You can use various types of mushrooms, but personally, I prefer the champignon variety. It is very simple to prepare, it is full and very tasty. If there is anyone who has not tried this preparation, I invite him to do it now!

  • 1 kg mushrooms
  • 2 medium red onions
  • 2 cloves of garlic
  • 1/2 red bell pepper
  • 1 carrot
  • 1 link parsley
  • 200 ml white wine
  • 1 box of diced tomatoes
  • salt pepper
  • 1 teaspoon Spice
  • 1 teaspoon sweet paprika
  • 2-3 tablespoons oil

Servings: 6

Preparation time: less than 30 minutes

1. Clean and wash the mushrooms. 2. Heat the onion together with the thinly sliced pepper, diced carrot and finely chopped garlic. Add a little salt and spice and let it simmer for a few minutes. 3. Cut the mushrooms into cubes or thinly sliced and add them over the onion. Turn the heat a little higher and stir until the water in the mushrooms starts to evaporate. 4. Add the wine, put the lid on and let the flavors blend. 5. Towards the end, add the mashed tomatoes, the paprika and season with salt and pepper. 6. When it has dropped enough, turn off the heat and enrich the taste with a bunch of chopped parsley. 7. Serve with hot polenta.
