Stuffed peppers and tomatoes

A recipe I never get tired of.

  • 10 bell peppers
  • 5 small tomatoes
  • 2 small tomatoes
  • 1 kg of minced pork
  • 150 g of rice
  • 3-4 onions
  • 200 gr tomato paste
  • spices (thyme, salt, pepper)

Servings: 5

Preparation time: less than 90 minutes

RECIPE PREPARATION Stuffed peppers and tomatoes:

I cleaned the peppers and large tomatoes from the seeds. I cut the small tomatoes into slices.

I mixed the pork with finely chopped onion, rice, spices and 100 g of tomato paste.

I filled the peppers and tomatoes with the meat mixture and used the tomato slices as a lid.

I placed them in a pot, I added 100 gr of tomato paste, salt and enough water to cover the vegetables.

I left them on the stove at the right heat for about 1 hour and a half.

For serving, we made a sauce separately from tomato paste, spices, 2 tablespoons of water and 1 tablespoon of flour. I also served it with fresh cream.


Ingredients for stuffed peppers in the oven

Of course, the complex taste of this dish is perfect for the minced meat we use and the spices used. Probably every housewife has a recipe for stuffing inherited from the family, similar to that of sarmale. I prefer to buy pieces of meat (pork and beef or just pork) that I can chop at home. The minced meat must be fatter (be it the pulp but also the neck or the pork breast) to obtain an airy and juicy filling. This is also true of sarmale, meatballs or small homemade.

In addition, I add onions, rice, salt, pepper, dried thyme and chopped greens: dill and green parsley. A little sweet paprika gives the filling a more pleasant color. The rice for meat fillings is one with a round grain and boils quickly. It is compared to 10% of meat: that is, to 500 g of meat we put 50 g of rice.

I cook it for 1-2 minutes together with the onion until it becomes glassy and it is impregnated with the surrounding flavors. The rice should NOT be boiled (not even half) before mixing with the minced meat! During cooking, it will absorb water from the meat and the surrounding water from the sauce, binding the filling but also the sauce.

I don't thicken the tomato sauce with flour and I make it from homemade tomato juice (see recipe here) or from passata to box or bottle.

From the quantities below results 5-6 stuffed peppers in the oven, depending on their size. Mine had approx. 8-9 cm long and about 6 wide. Each medium pepper contains about 100 g of filling (meat, rice, onions, spices).


Besides the fact that it is very tasty, the recipe for eggs stuffed with cottage cheese and peppers it is also very practical, being ready in less than half an hour.

1. Boil eggs for 7-8 minutes to harden.

2. Peel the peppers and grate them or cut them into cubes.

3. Finely chop the parsley.

4. After boiling, cut the eggs in half and set aside the yolk.

5. Vigorously mix the cottage cheese with the butter and spices, until you get a creamy composition.

6. Add the pepper, parsley and corn over the cream cheese and mix until smooth.

7. Fill the egg halves with the cheese and vegetable mixture. Garnish with slices of green olives.

To be tastier, leave eggs stuffed with cottage cheese and pepper refrigerate for half an hour, not before covering them with cling film.


Necessary ingredients stuffed vegetables:

  • 400 gr minced meat mixture, beef and pork
  • 2 zucchini
  • 3-4 bell peppers
  • 2 eggplants
  • 2 larger tomatoes to fill
  • 1 cup sour cream
  • broth, oil

For the filling:

  • 2 matching onions
  • 100 g of rice
  • 1 dill connection
  • 1 link parsley
  • 1 or
  • ground pepper, paprika, thyme, salt

We are used to eating goulash
