Ingredients

1 750-mililiter bottle of Bluecoat American Gin

8 ounces Vieux Carré Absinthe

8 ounces fresh lemon juice

1/4 pound powdered 10X sugar

16 ounce fresh juiced cranberries

32 ounces fresh apple cider

6 cardamom pods, toasted

2 star anise, toasted

10 dashes Fee Brothers cranberry bitters

10 dashes Angostura bitters

32 ounces sparkling water

Mint sprigs, for garnish

Directions

In a large bowl, whisk together gin, absinthe, sugar, and lemon juice until the sugar has dissolved.

Add cranberry juice, apple cider, cardamom, star anise, cranberry, and bitters, and stir together.

Just before serving, add the sparkling water and mint sprigs.

Gayle Found a Bright Side to Working From Home: Taco Tuesdays at Oprah's House

After spending three months holed up in her New York apartment during the coronavirus lockdown, Gayle&mdashwho had previously only ventured outside a total of five times&mdashspent the month of July working out of the Santa Barbara Bureau: a.k.a Oprah's guesthouse.

Her month-long stay had many highlights: socially distant lunches, Fourth of July festivities, special deliveries from Oprah's Promised Land Popsicle Shop, wearing personalized face masks, and, of course, reuniting with her BFF. But there is one thing in particular Gayle is still thinking weeks later: Taco Tuesdays&mdashand specifically, the Taco Bell-inspired Tortilla Crunch sandwich from Oprah's chef, Chef Raymond Weber.

Here, Gayle shares the recipe for the delicious dish, as well as a few other things she recommends you try right now, like listening to Carrie Underwood's first-ever Christmas album (it's never too early!), watching a timely new documentary that examines the pervasive issue of voter suppression, and tuning into the virtual 2020 Emmy Awards. (Psst: we hear the "O" of O will make an appearance).

Stars, they&rsquore just like us! A highlight of working out of the Santa Barbara bureau (a.k.a. Oprah&rsquos guesthouse) during the pandemic was Taco Tuesdays&mdashspecifically, chef Raymond Weber&rsquos Tortilla Crunch sandwich, inspired by the Taco Bell staple. This pic of it may not be the prettiest, but trust me, we&rsquore talking delicious: refried beans, grilled chicken thighs, pepper jack cheese, homemade salsa, chipotle sour cream, and a crispy corn tortilla wrapped inside a toasty flour tortilla. For those of us without a Chef Raymond, he shared the recipe with OprahMag.com.

Ingredients:

1 large flour tortilla
1 crispy corn tortilla
5 oz. grilled and chopped chicken thighs
1.5 tbsp. tomato salsa
2 tbsp. chipotle sour cream (1.5 tsp. chipotle powder and 2 tbsp. sour cream)
¼ cup roasted peppers
¼ cup shredded pepper jack cheese
2 tbsp. refried black beans
1 tbsp. cilantro leaves

Instructions:

  1. Lay the flour tortilla on counter and spread the refried beans in the center. Place the chicken on top of the beans, then add the cheese on top of chicken. Add the crispy corn tortilla on top of the cheese, then top with sour cream, tomato salsa, and roasted peppers.
  2. Fold the corners of the flour tortilla into the middle, moving in a clockwise motion until all edges meet in the middle.
  3. Heat a large nonstick pan on medium-high heat and place a small amount of oil in pan.
  4. Sear the folded edges first for 2 to 3 minutes until browned. Flip over and sear the flat side for 3 to 4 minutes until browned too.
  5. Remove from pan and cut into quarters. Top with a small amount of chipotle sour cream and cilantro leaves

Jun 12 Little Drummer Boy Cake

1 cup red decorating sugar

1 1/2 cups red, green, and silver foil-wrapped chocolate balls

4 sticks butter 1 pound, at room temperature

2 boxes powdered sugar 16 ounces each

1/4 cup Captain Morgan® White Rum

Preheat oven to 350°F. Line bottoms of three 6- or 7-inch round cake pans with parchment paper and coat with cooking spray.

In a bowl, with a mixer on low, beat cake mix, eggs, buttermilk, and oil until incorporated. Increase to medium-high and beat until smooth, 2 to 3 minutes. Divide batter evenly among pans. Bake 20 to 25 minutes, or until golden and a toothpick inserted in the center comes out clean. Let cool completely in pans.

Sprinkle a work surface with some of the red sugar. Press 30 of the red spice drops together. Sprinkle the top of the spice drops with some of the remaining red sugar. Roll out the spice drops, adding more red sugar when necessary to prevent sticking, to a 2 x 13-inch strip. Cut strip into twelve 1¾-inch triangles. Press the remaining spice drops plus any scraps together. Repeat process and use a fluted pastry wheel to cut two ¾-inch-wide lengthwise strips (to be used around base of cake).

See below for Rum Cream Frosting recipe. Place ½ cup frosting in a zip-top bag. Seal bag and set aside.

Trim tops of cakes layers with a serrated knife to level. Place a cake layer on a serving platter, trimmed side up. Spread top with some frosting. Place second layer on top, pressing into frosting to secure, and spread with frosting. Place remaining layer on top, trimmed side down. Insert straws or a wooden skewer into cake layers to secure. Spread a light layer of frosting over cake. Freeze cake to set (30 minutes).

Spread chilled cake with remaining frosting and smooth. Press strips of red around base, trimming to ft. Press triangles along top edge of cake, points down. Snip a small corner from bag of reserved frosting. Pipe small dots of frosting around top edge of cake and attach red and green Sixlets in alternating colors. Place two rows of white Sixlets around base of cake. Pipe dots of frosting on side of the cake at tips of red triangles and press a foil-covered chocolate onto cake. Arrange remaining foil-covered chocolates on top.

In a bowl, with a mixer on low, beat butter and powdered sugar until combined. Add white rum, increase to medium-high, and beat until frosting is white and fluffy, about 3 minutes.

Some ceremonies take place before the Christmas Eve supper. Among farmers, a popular ritual is the blessing of the fields with holy water and the placing of crosses made from straw into the four corners. It is also believed that animals can speak with a human voi ce.

Straw is put under white tablecloth. Some maidens predict their future from the straw. After supper, they pull out blades of straw from beneath the tablecloth. A green one foretells marriage a withered one signifies waiting a yellow one predicts spinsterhood and a very short one foreshadows an early grave.

Poles are famous for their hospitality, especially during Christmas. In Poland, an additional seat is kept for somebody unknown at the supper table. No one should be left alone at Christmas, so strangers are welcomed to the Christmas supper. This is to remind us that Mary and Joseph were also looking for shelter. In Poland, several homeless people were interviewed after Christmas. Some of them were invited to strangers’ houses for Christmas others that were not asked inside the homes but were given lots of food.

It is still strongly believed that whatever occurs on Wigilia (Christmas Eve) has an impact on the coming year. So, if an argument should arise, a quarrelsome and troublesome year will follow. In the morning, if the first visiting person is a man, it means good luck if the visitor is a woman, one might expect misfortune. Everyone, however, is glad when a mailman comes by, for this signifies money and success in the future. To assure good luck and to keep evil outside, a branch of mistletoe is hung above the front door. Finally, old grudges should end. If, for some reason, you do not speak with your neighbor, now is the time to forget old ill feelings and to exchange good wishes.

Traditionally, the Christmas tree is decorated on the Wigilia day – quite an event for children. The custom of having a Christmas tree was first introduced in Alsace (today a region of eastern France) at the end of the 15th century. Three centuries later, it was common around the world. Early on, the tree was decorated with apples to commemorate the forbidden fruit – the apple of paradise (the garden of Eden). Today, the Christmas tree is adorned with apples, oranges, candies and small chocolates wrapped in colorful paper, nuts wrapped in aluminum foil, hand-blown glass ornaments, candles or lights, thin strips of clear paper (angel’s hair), and home-made paper chains. The latter, ho wever, has become rarer because commercially produced aluminum foil chains are being sold.

St. Stephen’s Day is known as the second holiday. This is a day for visiting and exchanging Christmas greetings. When night begins to fall, you can hear stamping and jingling, followed by Christmas carol singing outside. Carolers begin their wandering from home to home. Herody, a popular form of caroling, is a live performance usually played by twelve young boys. Dressed in special costumes, they include King Herod, a field marshal, a knight, a soldier, an angel, a devil, death, a Jew, Mary, shepherds, and sometimes the Three Kings and an accordionist. They sing pastoral songs and carols, and when let into a house, perform scenes from King Herod’s life. Oration and songs vary and depend upon to whom they are being addressed: the owner of the house, a young woman about to be married, a widow, etc. At the conclusion, the performers are offered refreshments and some money. Also popular is caroling with a crib (szopka) and with a star. Usually, those are items are carried by three caroling teenagers. They, too, are given some money.

The Breaking of the Oplatek
One of the most beautiful and most revered Polish customs is the breaking of the oplatek . The use of the Christmas wafer (oplatek) is not only by native Poles in Poland but also by people of Polish ancestry all over the world.

The oplatek is a thin wafer made of flour and water. For table use, it is white. In Poland, colored wafers are used to make Christmas tree decorations. In the past, the wafers were baked by organists or by religious and were distributed from house to house in the parish during Advent. Today, they are produced commercially and are sold in religious stores and houses. Sometimes an oplatek is sent in a greeting card to loved ones away from home.

On Christmas Eve, the whole family gathers and waits impatiently for the appearance of the first star. With its first gleam, they all approach a table covered with hay and a snow-white tablecloth. A vacant chair and a place setting are reserved for an unexpected guest, always provided for in hospitable Polish homes.

The father or eldest member of the family reaches for the wafer, breaks it in half and gives one half to the mother. Then, each of them breaks a small part from each other’s piece. They wish one another a long life, good health, joy and happiness, not only for the holiday season, but also for the new year and for many years to come. This ceremony is repeated between the parents and their children as well as among the children then, the wafer and good wishes are exchanged with all those present, including relatives and even strangers. When this activity is over, they all sit down and enjoy a tasty though meatless supper, after which they sing koledy (Christmas carols and pastorals) until time for midnight Mass, also know as Pasterka (“the Mass of the Shepherds”).

Country Style Steak

Description

We’re turning cubed steak into Country Style Steak. It’s another Southern favorite comfort food that includes onions and gravy.

Ingredients

1 lb Cubed Steak
1 cup Flour, All-Purpose or Self-Rising
2 teaspoons Beef Granules, or use Beef Broth
1 small Onion, if desired
Salt and Pepper to taste

Instructions

Leave the cubed steak on it’s packing tray.
Add salt.
Add black pepper.
Place one cup flour in small tray or bowl.
Dredge each steak in flour, pressing flour into the meat.
Coat both sides well.
Set the coated steaks back on the package tray.
Let steaks rest for 15 minutes to dry and come to room temperature.
Place skillet over Medium heat on stove top.
Add a thin layer of cooking oil to the skillet.
When oil is hot, carefully add the steaks to the skillet.
Let brown for 3 minutes, then flip over.
Let other side brown for 3 minutes.
Remove from skillet and set aside for now.
Remove all but about 3 Tablespoons of oil from skillet. Leave the browned bits.
Sprinkle 3 Tablespoons of flour over the oil. Stir quickly.
Let the flour and oil cook for one minute, stirring constantly.
Gradually add the broth, stirring constantly to remove any lumps.
Add the sliced onions.
Place the steak pieces back in the skillet.
Cover skillet and let simmer on Medium-Low for 20 minutes.
Onions should be translucent and meat done and tender.
Serve warm.
Enjoy!

Notes

Recipe can be easily doubled. Just add more cubed steak.

A Holiday Cookie Recipe for Each Day of Freeform's 25 Days of Christmas Movie Marathon

The month of December symbolizes a lot of things. Christmas is right around the corner, finals are creeping up on students, and, of course, it marks the beginning of the 25 Days of Christmas Movie Marathon. New movies and old classics are played every day to help us get into the Christmas spirit. If you feel like baking this finals season, here are some cookie recipes and movie pairings to keep you busy (or just help you procrastinate).


My 2018 Holiday Baking List

peanut butter blossoms. definitely my all time favorite and a cookie I just can’t get enough of.

perfect cut out sugar cookies. these are the BEST foolproof, simple sugar cookies. the only recipe i use!

soft gingersnaps. sometimes I make this recipe x four. We LOVE them. And I’m not a gingersnap person!

mother lovett’s pink and green thumbprints. because can’t have christmas without them – my mom and aunt’s faves.

I will probably also make some peppermint bark. And I love to do chocolate covered oreos! They are so easy. I also buy the white fudge covered oreos as a hack and drizzle them with dark chocolate and sprinkles!


Christmas Wassail Recipe

I have been making wassail since I was a teenager. I don’t include alcohol since its one of those special holiday drinks I want everyone, young and old to enjoy! The smell and the taste of this Christmas Wassail Recipe will always bring both me and my family right back to Christmas!

I asked myself what my top 5 Christmas songs were and it was agony…really…so I had to make it a top 10. I love, love, love Christmas and I married a man who does as well. Christmas music is so special to me…for years I insulated myself from it until December 10th, wanting to cherish the days of holiday music. Now that I have little ones, that quickly went out the window.
This year my husband decided to donate lots of money to our power company…he’s gone crazy, I have to sleep with blinders on…even our children’s’ beds are lit up lol! He is seriously channeling Clark Griswold!

My top 10 Christmas Songs (in no particular order…I didn’t want to have a stroke!)

Josh Groban – Little Drummer Boy (love him!)
Mariah Carey – All I Want For Christmas Is You (so fun)
Donny Osmond – A Soldiers King (I cry every time)
Wham – Last Christmas (people should not even try to remake it…cease and desist!)
David Foster – Carol of the Bells (he is a genius)
Dan Fogelberg – Same Old Lans Syne (rips my heart out every time…sigh)
Nat King Cole – O Holy Night (as smooth as they come and a gentleman)
The Carpenters – Merry Christmas Darling (she has the voice of an angel!)
Jars Of Clay – Little Drummer Boy (ridiculously good version)
Band-Aid – Do They Know It’s Christmas (gotta love it…all that talent)
Donnie Hathaway – This Christmas (another genius)
Donnie Osmond or Amy Grant – My Grown Up Christmas List (both versions are wonderful and heartfelt!!)

OK so you may have noticed it’s over 10…what’s a girl to do!

Take a listen on ITUNES and decide for yourself! If I could only own 3 Christmas CD’s it would have to be Donny (Christmas at Home), Amy (Home for Christmas) and a mixed CD of popular songs…both my husband and I would be satisfied. BTW if you look on ITUNES Jars of Clay has 2 versions of the Little Drummer Boy. The one that says Little Drummer Boy (minus the A) is the best in my opinion.

What are your favorites…maybe I am unaware of some gems out there!!

Here are 2 Christmas Drink recipes for the holidays…traditional Wassail and a special treat for the kids. I have been making Wassail since I was about 20 and every year a few folks say…”I never heard of it” and I say “ever hear that old Christmas song Here We Go a Wassailing…” then they believe I didn’t make it up.
This makes your home smell delicious, warms you to your toes and is easily transported. Once made and cooled I pour it back into the cider container (and or OJ container) and take it with me. I then reheat it in a pot wherever I am going.

4 cups apple cider
1 ½ cups orange juice
6 oz can of pineapple juice
2 TBS lemon juice
3 TBS sugar
¼ cup mulling spices
OR to make your own mulling spice by combining 4 sticks of cinnamon, 3 long strips of orange rind, 1 TBS whole cloves and 1 TBS whole allspice berries.
Combine everything in a large pot bring to a boil stirring often. (If you have a metal spice ball, use it, if not just throw it all in then pour through a strainer prior to serving or storing). Turn off the stove and let it sit for 30 minutes before reheating to serve. Serve it very warm almost like tea or coffee. You can make it ahead, refrigerate it and reheat as necessary. Wassail keeps well for 4 days. If you want to kick it up throw in some Brandy or Cognac to your liking.

Can’t leave the kids out of the of the holiday fun. Surprise and delight them with a Festive Strawberry Drink!

Festive Strawberry Drink

16 oz Container of frozen strawberries in syrup
8 oz of vanilla yogurt
½ cup ice
Red, Green or a combination of holiday sugar sprinkles
Grown up glasses for the occasion

Set up one bowl filled with enough water to cover the bottom and one bowl with the colored sugar covering the bottom. Take your chosen glasses and holding them by the bottom, first dip them in the water, and then dip them in the sugar. Wiggle the glass in the sugar a bit until the rim is evenly coated. Set aside.

Combine strawberries and ice in your blender, hit ice crush or blend and pulse until well blended. Pour into the glasses. Scoop the yogurt into a small plastic sandwich bag, snip off one corner and swirl into the drink. Serve immediately and enjoy the smiling faces.
This makes 4 small glassfuls or 2 big glassfuls.
